Hongkong crispy fried noodles with pork strips, 肉絲炒麵

There are many variations of fried noodles depending where you go… in Hongkong the noodles are thin and crispy. The sauce is thick and usually the noodles come with pork strips, soy bean sprouts and Kao wong. This dish can often be ordered at dim sum restaurants and now you can also cook it at home. 材料:

1. 大約 100 克 = 3. 53 oz 炒麵

2. 150 克 = 5. 29 oz 瘦肉, 洗淨, 切絲.

醃料:

1. 1 茶匙 rum 酒
2. 1 茶匙生抽
3. 1/4 茶匙糖
4. 少許胡椒粉,拌勻後
5. 3/4 茶匙豆粉, 拌勻
6. 1 荼匙水拌勻
7. 1 茶匙麻油, 拌勻後放雪櫃 30 分

3. 1 片薑, 切絲
4. 180 克 = 6.35 oz 芽菜, 去頭尾, 洗淨, 瀝乾成銀芽
5. 50 克 = 1. 76 0z 韭黃, 洗淨, 瀝乾切銀芽長度
6. 2 只冬茹, 洗淨, 浸軟, 切絲
7. 一些油

調味料:

1. 2 茶匙生抽
2. 1 茶匙半雞粉
3. 1 茶匙豆粉
4. 12 茶匙水

Ingredients;

1. around 100 grams = 3.53 oz fried noodles

2. 150 grams = 5. 29 oz pork meat, cut in strips

marinade :

1. 1 tsp rum
2. 1 tsp light soy sauce
3. 1/4 tsp sugar
4. a pinch of pepper
5. 3/4 tsp corn starch
6. 1 tsp water
7. 1 tsp sesame oil
mix together and put in fridge for 30 mins

3. slice ginger
4. 180 grams = 6. 35 oz bean sprouts
5. 50 grams = 1. 76 oz kao wong
6. 2 chinese mushrooms
7. some oil

seasoning ;

1. 2 tsp light soy sauce
2. 1 1/2 tsp chicken powder
3. 1 tsp corn starch
4. 12 tsp water

    I just watched your tutorial videos and browsed your website. I admire your passion to cook and I am very happy to have found these useful information especially the videos in Cantonese.

    I too was born and grew up in HK and have immigrated to the U.S. five years ago. I really miss all the good food in HK. Your recipes can help relieve my homesick!

    I also like that your recipes use simple ingredients that can be easily found in Chinese supermarkets in U.S. Unlike many recipes posted by other people, yours use less MSG products like canned chicken soup or chemical additives. This is especially important as we all want to eat healthy.

    I can’t stand it much longer! Every time that I watch one of your video demonstrations I become so hungry that I almost faint. Living in a small city, it is difficult to find many of the ingredients that you use. And now, since losing my wife recently, I can only cook for one person. But, I get to a big city about once a month and will try to accumulate some of your basic ingredients so that I can learn more by watching you and then doing myself.
    My late wife and I were in Hong Kong for two weeks many years ago and the memories are precious to me. Thank you again for sharing.
