Ice skin mooncake

Ice skin mooncakes or snow skin mooncakes are a modern variation of mooncakes. You don’t need salted egg yolks or lotus paste for them. Even the skin is different and you don’t need to bake them.

I have two videos teaching how to make red bean and mung bean fillings.

材料: 4 個

1. 40 克 = 1.41 oz, 糯米粉
2. 15 克 = 0. 53 oz,  澄麵粉
3. 25 克 = 0. 88 oz, 練奶
4. 25 克 = 0. 88 oz, 椰奶
5. 15 克 = 0.53 oz, 糖
6. 30 ml = 1 fl oz, 牛奶
7. 25 ml = 0.85 oz, 油
8. 一個膠袋
9. 110 克 = 3.90 oz, 綠豆蓉
10.110 克 = 3.90 oz, 綠豆蓉

Ingredients 4 mooncakes

1. 40 grams = 1.41 oz, glutinous rice flour
2. 15 grams = 0. 53 oz, wheat flour
3. 25 grams = 0.88 oz, condenset milk
4. 25 grams = 0.88 oz, coconut milk
5. 15 grams = 0.53 oz, sugar
6. 30 ml = 1 fl oz, milk
7. 25 ml = 0.85 oil
8. one plastic bag
9. 110 grms = 3. 90 oz, mung bean paste
10. 110 grms = 3. 98 oz, red bean paste

    When you mention wheat flour for snowskin mooncake, what do you mean? Cause most flour like all purpose and bread flour are actually wheat flour with different gluten content..

      Thank you for watching my video. Just like you wrote all the flour are different gluten content. For the snowskin mooncake I use 15 grams = 0. 53 oz, wheat starch not wheat flour to becomes better texture. Thank you. Have a lovely day :)
