Salty eggs are usually made of duck eggs but as I was not able to get duck eggs here I substituted them with regular chicken eggs. You can use these eggs for various dishes, such as cantonese moon cakes or Zongzi. So better have some prepared so you can use them anytime you need some. I have 3 hens and they have been laying wonderfully consistent since spring. So you can imagine the amount of eggs we have at home. I would like to make salty eggs… I have 30 eggs, as for the recipe, will i be using 3 times of your original recipe? Can I use stainless steel pots to preserve them? Hi Landa, thank you for trying my recipes. The best use glass pots not stainless steel pots because of the salt will damage the pots ^^
